7 March | Filipino Kamayan feast with Chef AJ Takla

Chef AJ is back, this time bringing her Filipino roots, as she teaches everyone how to host an incredible communal Filipino feast called "Kamayan". The food is laid out on banana leaves and no plates, forks, and knives in sight - we eat with our hands! This cooking class is just as much about the eating as it is the cooking. The first half will be dedicated to demos and hands-on cooking, and the other half will be setting up the feast and slowly eating.
As always, expect AJ's classes to have some classics, some modern twists, and some history lessons.
Sample menu (TBC): Garlic rice, vinegar marinated milkfish (bangus), crispy pork belly (lechon kawali), eggplant omelette (tortang talong), crispy chicken wings (sinigang and adobo glaze), tofu adobo, eggplant pickle (ensaladang talong), coconut pandan dessert (buko pandan), and a few other side dishes.
AJ brings into the kitchen her childhood from Oman, her Filipino and Egyptian roots, and her training in Paris. She likes to create food that is accessible and nostalgic. She likes to talk about the history of the dishes she's prepared and encourages people to ask WHY when following recipes - hopefully you will leave this class with a better understanding of Filipino food, its history, and the excitement of eating with your hands!
